I always recommend using organic ingredients whenever they are available to you.
2 lbs sweet potato cut into 2 inch chunks
1/4 cup olive oil
4-6 sage leaves
2-3 sprigs of thyme
Lemon, for zesting
Bring a medium pot of water to a boil. Salt the water.
Add the sweet potatoes and boil for 10 minutes until just tender but not completely soft.
Immediately strain. Put the potatoes onto a paper towel lined baking sheet to dry.
Add the oil to a large sauté over low heat.
Once oil is hot, add sage leaves and thyme. Allow to float in the olive oil for a few minutes to scent the oil.
Remove the herbs and reserve.
Raise the heat to high. Once oil is hot, add in the dry sweet potatoes and sear them on each side until golden brown. Season with a little salt and pepper and sprinkle some the crispy herbs over top along with a sprinkle of lemon zest.
