Always use organic when possible
Makes 5 cups
INGREDIENTS
6 cups fresh cherries, pitted
2 Tbsp olive oil
1/2 tsp sea salt, fine
1/2 tsp freshly ground black pepper
4 Tbsp fresh parsley, finely minced
 
PREPARATION
Preheat oven to 450 F.
Pit cherries and put in large mixing bowl.
Add all the remaining ingredient to the bowl and combine well.
Set aside.
Line a sheet pan with parchment paper.
Spread cherries on the pan.
Roast for 15-17 minutes.
Remove from oven and sprinkle with parsley.
Gently toss cherries when cooled.
Eat warm as a snack or as a side.
