Dr. Nandi’s Creamy Avocado Soup
Use organic ingredients whenever possible.
1/2 seedless cucumber
1 medium avocado
2 Tbsp plain yogurt
2 Tbsp fresh mint
1 sprig fresh mint
4 tsp fresh lime juice
1 1/2 tsp sea salt
1/4 tsp fresh ground black pepper
1/4 tsp fresh ground cumin
Place the cucumber, avocado, shallot, yogurt, 2 Tbsp mint, lime juice, salt, pepper, cumin, and 1 cup cold water in a blender, and process until smooth.
Chill for at least 1 hour.
Serve garnished with a slice or two of avocado and remaining mint leaves.
