2 plum tomatoes seeded and diced
1 small yellow bell pepper, diced
1 English cucumber diced
1/2 red onion diced
1 Tbsp red wine vinegar
1 Tbsp extra virgin olive oil
kosher salt and freshly cracked black pepper
In a medium bowl, combine the tomatoes, bell pepper, cucumber, onion, vinegar, oil, and 1/4 teaspoon each salt and pepper.
Serve with your favorite dippers.
