Always use organic ingredients when possible
Serves 8
4 Tbsp avocado oil
3 tsp ginger, peeled, grated
2 serrano peppers, seeded, minced
3 tsp cumin seeds
3 tsp coriander seeds, ground
5 cups mashed sweet potatoes
1 tsp paprika
1/2  tsp cayenne (more if you like it spicier)
1 tsp turmeric
1 tsp kosher salt
2 Tbsp fresh lemon juice
6 Tbsp fresh cilantro, chopped
In a medium pot over medium high heat, bring the water to a boil.
Add the potatoes and cook until fork tender. About 17-20 minutes.
Mash the potatoes with skins on.
In a large pan over medium heat, add the avocado oil.
Add the peppers, ginger and cumin seeds.
The seeds should turn brown. About 2-3 minutes.
Add mashed potatoes, ground coriander seeds, paprika, cayenne, turmeric salt, lemon juice and cilantro.
Stir to combine.
Cook for 2-3 more minutes.
Serve immediately.
