Peanut Chicken and Sticky Rice

Use organic ingredients whenever possible.



1/2 cup creamy peanut butter

1/4 cup soy sauce

3 Tbsp rice vinegar

1 Tbsp fresh ginger, grated

2/3 cup warm water

2 Tbsp extra-virgin olive oil

1 lb. boneless skinless chicken breast, cut into cubes

Kosher salt and black pepper

2 scallions, roughly chopped (white and green parts)

2 carrots, peeled and julienned

2 celery, julienned

1 cup frozen peas

Handful cilantro, chopped

Sticky rice, for serving
