Ingredients

2 lbs. leftover turkey breasts, boneless, skinless, shredded

2 onions, peeled, diced

4 stalks celery, diced

23 jalapeno peppers, minced (add more or less depending on heat preference)

12 cloves garlic, peeled, finely minced

1 tsp cumin

1 tsp coriander powder

1 tsp oregano

1/2 tsp freshly ground black pepper

1 Tbsp chili powder

1 Tbsp salt

4 cups low sodium chicken broth

1 lb. frozen corn

15 oz cannellini beans

Instructions

  • Except for the shredded turkey, beans and corn, add in all ingredients to the slow cooker.
  • Cook for 4 hours on high or 6 hours on low.
  • Roughly 60 minutes before serving, add the turkey, beans and corn to slow cooker. Stir to combine.
  • Cook to heat up beans, corn and turkey.
  • Serve warm.
