Simple Slow Cooker Leftover Turkey Chili

Ingredients
  

  • 2 lbs. leftover turkey breasts boneless, skinless, shredded
  • 2 onions peeled, diced
  • 4 stalks celery diced
  • 2-3 jalapeno peppers minced (add more or less depending on heat preference)
  • 12 cloves garlic peeled, finely minced
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp oregano
  • 1/2 tsp freshly ground black pepper
  • 1 Tbsp chili powder
  • 1 Tbsp salt
  • 4 cups low sodium chicken broth
  • 1 lb. frozen corn
  • 15 oz cannellini beans

Instructions
 

  • Except for the shredded turkey, beans, and corn, add in all other ingredients to the slow cooker.
  • Cook for 4 hours on high or 6 hours on low.
  • Roughly 60 minutes before serving, add the turkey, beans, and corn to slow cooker. Stir to combine.
  • Cook to heat up beans, corn, and turkey.
  • Serve warm.
