Serves 8
INGREDIENTS
1 1/2 Tbsp fresh ginger, grated,peeled
1 1/2 Tbsp unseasoned rice vinegar
1 1/2 Tbsp avocado oil
3 tsp light brown sugar, packed
1/3 tsp curry powder
1/4 tsp crushed red pepper flakes
2 lbs assorted firm stone fruit of your choice, julienned
4 scallions, thinly sliced diagonally
Kosher salt and freshly ground black pepper to taste
PREPARATION
In a medium bowl, add the first 6 ingredients and whisk well to combine.
Add fruit and scallions.
Toss to coat evenly.
Season with salt and pepper to taste.
Serve cool.
