Sunflower Seed and Tofu Burger
Use organic whenever necessary
1 ¼ lbs extra firm tofu, drained, patted dry
3 medium eggs
½ cup fine dried bread crumbs, gluten free optional
½ cup cashew nuts, shelled toasted
½ cup sunflower seeds, shelled toasted
½ cup button mushrooms, sliced
1 ¼ Tbsp Dijon mustard
1 Tbsp soy sauce
1 tsp cumin, ground
½ tsp cayenne, ground
¼ tsp fine sea salt
1 ¼ Tbsp avocado oil
In a food processor, add all the ingredients.
Pulse until mixture starts to combine.
Scrape down side of food processor.
Continue to pulse to get rid of bigger chunks.
If the mixture is “thin” add more bread crumbs slowly.
Divide mixture into 8 portions.
Press and form into semi-flat patties with your hands.
In a large skillet over medium high heat, add avocado oil.
Add 4 patties to skillet, cover and cook. About 4-6 minutes.
Flip, cover and continue to cook for 4-6 minutes. Should be dark brown.
Check to make sure center is cooked through.
Remove and cook the next 4 patties.
