2 Tbsp extra virgin olive oil, divided
1 medium yellow onion, diced into small pieces
3 cloves garlic, finely minced
1/2 tsp cumin
Salt and freshly ground pepper to taste
5 cups low sodium vegetable broth
1/3 cup fresh parsley, chopped
2 ribs celery, with leaves, chopped
1 lb. dried split peas, rinsed
4 slices of white sandwich bread, cut into 1/2 inch cubes (can substitute gluten free bread)
