Dairy-Free Coconut Rice Pudding

Ingredients
  

  • 13.5 oz.coconut milk unsweetened
  • 1/2 cup sugar
  • 2 cups water divided
  • 1 tsp kosher salt
  • 1/4 tsp ground fresh ginger
  • 1 1/4 cups rice
  • 3/4 cup shredded coconut

Instructions
 

  • Make coconut rice. In a medium-sized sauce pot, combine coconut milk, sugar, one cup water, salt.
  • Over high heat, bring the mixture to a boil.
  • With your hands, rub the rice and ginger together to infuse flavors and then place into a small bowl.
  • Once the liquid has come to a boil, add contents of your small bowl, turn heat to low and cover the pot. Let cook for 25 minutes.
  • After the rice has cooked for 25 minutes, remove the lid and add one more cup of water. Turn heat up to high and whisk until mixture is bubbly.
  • Remove from heat to cool.
  • Place into a serving dish or individual bowls and refrigerate until firm.
