In a medium saucepan over medium-high heat, add ginger, lemon peel and water.
Bring to boil and then simmer uncovered. About 10-12 minutes.
Add sugar and stir constantly.
Continue to simmer until mixture reduces. About 15-17 minutes.
Strain out solid pieces from liquid.
Discard solid pieces.
Allow ginger syrup to cool.
Pour into an airtight glass container.
Chill for 2 hours before using.
In a 12 oz. glass, add ice cubes, 2 Tbsp ginger simple syrup with cold club soda.
Stir well to combine.
Additional syrup can be added if needed.
