Combine apricots, raisins, juice and orange rind in a small bowl.
Cover and let stand for 1 hour — or even up to 1 day.
In a food processor or blender, chop the mixture finely. Mix in 1 1/2 cups of coconut and pecans or walnuts.
Scoop 1 Tbsp of the mixture, rolling into balls. Roll in remaining coconut.
Let stand on parchment paper to dry for 8 hours or overnight.
