Preheat oven to 425 F.
In an oven safe skillet over medium heat, add avocado oil.
Add garlic and allow to become fragrant. Stir often.
About 1-2 minutes.
Add tomatoes to skillet and stir.
Add white wine and stir well.
Remove from heat.
Season fillets with favorite seasoning blend.
Add fillets to the pan. Make sure they touch the bottom.
Top fillets with olives and basil.
Spoon some tomatoes and pan juice over fillets.
Place in oven and cook for 10 - 15 minutes.
Remove and enjoy.
