Brain-Boosting Fish Fillets

Ingredients
  

  • 4 5- oz. haddock fillets
  • 6 garlic cloves peeled, crushed
  • 2 Tbsp avocado oil
  • 2 pints cherry tomatoes halved
  • 2 Tbsp white wine not sweet
  • 1/2 cup kalamata olives pitted
  • 1 cup fresh basil finely chopped
  • Favorite seasoning blend

Instructions
 

  • Preheat oven to 425 F.
  • In an oven safe skillet over medium heat, add avocado oil.
  • Add garlic and allow to become fragrant. Stir often.
  • About 1-2 minutes.
  • Add tomatoes to skillet and stir.
  • Add white wine and stir well.
  • Remove from heat.
  • Season fillets with favorite seasoning blend.
  • Add fillets to the pan. Make sure they touch the bottom.
  • Top fillets with olives and basil.
  • Spoon some tomatoes and pan juice over fillets.
  • Place in oven and cook for 10 - 15 minutes.
  • Remove and enjoy.
