Dr. Nandi's Beet Pesto Pasta

This is a family favorite! We often add all sorts of lightly sautéed vegetables!

  • 1/2 lb Regular or Quinoa Pasta
  • 2 Cloves Garlic
  • 1/2 Cup Raw Almonds
  • 2 Large cooked and peeled purple beets coarsely chopped
  • 1/3 Cup Olive Oil
  • 1/3 Cup Parmesan Cheese
  • 2 Tbsp Red Wine Vinegar
  • 1/2 Cup Fresh Basil
  • Salt & pepper to Taste

Instructions
 

  • Blend until smooth!
