Preheat oven to 400 F.
In a large bowl, add oil, garlic powder, salt, pepper and 3 Tbsp freshly grated parmesan.
Whisk to combine.
Set aside.
Thinly slice Brussels sprouts and add to bowl.
Toss to coat evenly.
On a large baking sheet, spread Brussels sprouts in an even layer.
Bake for 10 minutes.
Toss and stir.
Bake for 9-10 more minutes.
Chips should be golden and crisp.
Season with remaining Parmesan.
Serve with favorite dipping sauce or eat by themselves.
