Broccoli and Sunflower Seed Salad

Ingredients
  

  • THE Salad
  • 1 ½ lbs. broccoli florets thinly sliced, roughly chopped
  • ¾ cups raw sunflower seeds shelled
  • ¾ cups red onion peeled, finely chopped
  • ¾ cups sharp cheddar cheese grated (non-dairy optional)
  • 2/3 cups dried tart cherries

Instructions
 

  • In a pan over medium heat add raw sunflower seeds.
  • Stir frequently and cook for 4-5 minutes. Should start to turn golden.
  • Set aside.
  • In a large bowl, add chopped broccoli, onion cheese and cherries.
  • Stir to combine and set aside.
  • In a small bowl, add all dressing ingredients and whisk until well blended.
  • Pour dressing over salad and stir to combine. Make sure that all ingredients are coated.
  • Serve and enjoy!
