Ingredients
  

  • 16 cups club soda chilled
  •  
  • 2 1/2 cups fresh ginger peeled, chopped
  •  
  • 4 4 inch strips lemon peel yellow part
  •  
  • 1 2/3 cups white sugar
  •  
  • 5 cups water
  •  

Instructions
 

  • In a medium saucepan over medium-high heat, add ginger, lemon peel and water.
  • Bring to boil and then simmer uncovered. About 10-12 minutes.
  • Add sugar and stir constantly.
  • Continue to simmer until mixture reduces. About 15-17 minutes.
  • Strain out solid pieces from liquid.
  • Discard solid pieces.
  • Allow ginger syrup to cool.
  • Pour into an airtight glass container.
  • Chill for 2 hours before using.
  • In a 12 oz. glass, add ice cubes, 2 Tbsp ginger simple syrup with cold club soda.
  • Stir well to combine.
  • Additional syrup can be added if needed.
