Sunflower Seed and Tofu Burger

Ingredients
  

  • 1 ¼ lbs extra firm tofu drained, patted dry
  • 3 medium eggs
  • ½ cup fine dried bread crumbs gluten free optional
  • ½ cup cashew nuts shelled toasted
  • ½ cup sunflower seeds shelled toasted
  • ½ cup button mushrooms sliced
  • 1 ¼ Tbsp Dijon mustard
  • 1 Tbsp soy sauce
  • 1 tsp cumin ground
  • ½ tsp cayenne ground
  • ¼ tsp fine sea salt
  • 1 ¼ Tbsp avocado oil

Instructions
 

  • In a food processor, add all the ingredients.
  • Pulse until mixture starts to combine.
  • Scrape down side of food processor.
  • Continue to pulse to get rid of bigger chunks.
  • If the mixture is “thin” add more bread crumbs slowly.
  • Divide mixture into 8 portions.
  • Press and form into semi-flat patties with your hands.
  • In a large skillet over medium high heat, add avocado oil.
  • Add 4 patties to skillet, cover and cook. About 4-6 minutes.
  • Flip, cover and continue to cook for 4-6 minutes. Should be dark brown.
  • Check to make sure center is cooked through.
  • Remove and cook the next 4 patties.
