Brussels Sprout Chips

  • 1 lbs. Brussels sprouts trimmed, thinly sliced
  • 2 Tbsp extra virgin olive oil
  • 4 Tbsp Parmesan freshly grated, divided
  • 3 tsp garlic powder
  • Kosher salt and freshly ground black pepper to taste.


  • Preheat oven to 400 F.
  • In a large bowl, add oil, garlic powder, salt, pepper and 3 Tbsp freshly grated parmesan.
  • Whisk to combine.
  • Set aside.
  • Thinly slice Brussels sprouts and add to bowl.
  • Toss to coat evenly.
  • On a large baking sheet, spread Brussels sprouts in an even layer.
  • Bake for 10 minutes.
  • Toss and stir.
  • Bake for 9-10 more minutes.
  • Chips should be golden and crisp.
  • Season with remaining Parmesan.
  • Serve with favorite dipping sauce or eat by themselves.
