Tomato and Artichoke Heart Salad

Ingredients
  

  • 3 cups cherry tomatoes sliced in half
  • 15 oz artichoke heart canned, drained, sliced into ¼ inch
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup extra virgin olive oil
  • 1 1/2 Tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp sea salt
  • 1/2 tsp freshly-ground black pepper

Instructions
 

  • Mix olive oil, apple cider vinegar, sugar substitute, salt and black pepper together to make dressing. Wait until honey is dissolved.
  • Combine artichoke hearts, red onions, parsley and tomatoes in a large bowl.
  • Pour dressing over salad. Gently toss.
  • Ready to Serve!
