Dr. Nandi's Tomato Salsa



  • 2 plum tomatoes seeded and diced
  • 1 small yellow bell pepper diced
  • 1 English cucumber diced
  • 1/2 red onion diced
  • 1 Tbsp red wine vinegar
  • 1 Tbsp extra virgin olive oil
  • kosher salt and freshly cracked black pepper


  • In a medium bowl, combine the tomatoes, bell pepper, cucumber, onion, vinegar, oil, and 1/4 teaspoon each salt and pepper.
  • Serve with your favorite dippers.
