Simple Slow Cooker Leftover Turkey Chili
Ingredients
- 2 lbs. leftover turkey breasts boneless, skinless, shredded
- 2 onions peeled, diced
- 4 stalks celery diced
- 2-3 jalapeno peppers minced (add more or less depending on heat preference)
- 12 cloves garlic peeled, finely minced
- 1 tsp cumin
- 1 tsp coriander powder
- 1 tsp oregano
- 1/2 tsp freshly ground black pepper
- 1 Tbsp chili powder
- 1 Tbsp salt
- 4 cups low sodium chicken broth
- 1 lb. frozen corn
- 15 oz cannellini beans
Instructions
- Except for the shredded turkey, beans, and corn, add in all other ingredients to the slow cooker.
- Cook for 4 hours on high or 6 hours on low.
- Roughly 60 minutes before serving, add the turkey, beans, and corn to slow cooker. Stir to combine.
- Cook to heat up beans, corn, and turkey.
- Serve warm.
