Garlic Steamed Mussels
GARLIC STEAMED MUSSELS
Always use organic when possible
- Large [pt
- 3 lbs mussels, scrubbed, debearded
- 3 tbsp alted butter (or your favorite vegan alternative)
- 2 mall onions, peeled, chopped
- 6 cloves garlic, peeled, finely minced
- 24 oz diced tomatoes, canned
- 1 cup white wine dry
- 4 tbsp freshly chopped parsley, divided
- Kosher salt and freshly ground pepper to taste

In a large pot over medium-low heat, add butter and melt

Add onions and allow to soften and become fragrant (about 4-5 minutes)

Add garlic. Cook for 60-90 seconds

Add tomatoes, wine, and parsley Stir to combine well Add salt and pepper to taste

Add mussels and simmer until shells open (about 4-5 minutes)

Garnish with 1 Tbsp of fresh parsley Serve with grilled bread
**Important Note: Always discard shells that do not open**
